BANANA BREAD
non-stick pan
Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 16 slices
2/3-cup water
¾ cup agave nectar
1-teaspoon vanilla
2 bananas ripe and mashed (1-cup banana)
2-tablespoons vinegar
2-cups whole-wheat pastry flour
1½-teaspoons baking powder
½-teaspoon baking soda
½-teaspoon salt
optional: ½-cup nuts,
smashed
In the standing mixing bowl mix together the water, agave, vanilla,
mashed bananas, and vinegar.
In another bowl, whisk together the flour, baking powder,
baking soda, and salt in a mixing bowl.
Add the dry to the wet and mix until uniform.
Pour batter into a bread pan.
Bake at 350 degrees for 50 minutes or until a toothpick
inserted into the center comes out clean.
