STRAWBERRY SQUARES
Preheat oven to 350 degrees
Preparation time: 20 minutes
Yield: 8 servings
Filling
8-cups strawberries
2-tablespoons arrowroot powder
1/2-cup agave nectar
Top and Bottom Layer
2-cup oatmeal
1cup whole-wheat pastry flour
¼-cup coconut oil
1/2-cup agave nectar
Toss strawberries with the arrowroot powder. Place in a pan
over medium heat and cook strawberries down.
Reduce the strawberries to half their volume, and then stir in the
agave.
Combine the oats, flour, and oil. Stir in the agave.
In an 8-inch square pan, place half the oatmeal mixture, the
strawberry filling, and then the other half oat mixture.
Bake at 350 degrees for 35 minutes or until crust is
golden.
