CHUNKY MUSHROOM BARLEY

Preparation time: 10 minutes
Yield: 12 servings

1 to 3-tablespoons oil
1-cup onions, chopped
3 cloves garlic, chopped
3 grated carrots
1-pound mushrooms, sliced
3 stalks celery, chopped
½-teaspoon marjoram
½-teaspoon thyme
1 bay leaf
½-cup barley
2-vegan bullion cubes
8-cups water
salt and pepper to taste

In a pressure cooker heat oil over medium heat.  Sauté the onions, carrots, celery, and garlic until soft.  Add the mushrooms, marjoram, thyme, and bay leaf.  Stir in the barley and bullion cubes.   Add the water. 

Cover and bring up to pressure.  Lower heat and cook for 3 more minutes.  Remove from heat and let sit for ½- hour. 

Add salt and pepper to taste and serve.
