CHOCOLATE CHIP WALNUT OATMEALCOOKIES

CHOCOLATE CHIP WALNUT OATMEALCOOKIES


Preheat oven to 350 degrees 
Preparation time: 15 minutes
Yield: 3-dozen cookies

1-cup water
2-tablespoons ground flaxseed
1/2-cup coconut oil
3/4-cup maple syrup
2 1/2-cups whole-wheat pastry flour
2-cups oatmeal
1-teaspoons baking powder
1-teaspoons baking soda
1-cups vegan chocolate chips
1-cups walnuts, smashed

optional: 1-teaspoon cinnamon 

In a standing mixing bowl, mix together the water, flaxseed, oil, and maple syrup.  

In another bowl, whisk together flour, oatmeal, baking powder, baking soda, chocolate chips, and nuts. 

Add the dry to the wet and mix until uniform.  

Pat the dough into a large rectangle 1-inch thick on plastic wrap.  Refrigerate for 10 minutes.  


Cut into 2-inch squares.  



Place on a parchment lined baking sheets or silicone pad.  

Bake cookies at 350 degrees for 22 minutes or until lightly golden. 





CHEEZY POPCORN

CHEEZY POPCORN


Preparation time: 5 minutes
air corn popper
Yield: 4 individual servings

1/2-cup raw popcorn air-popped 
coconut oil spray
salt to taste
2-tablespoons nutritional yeast

Place the hot popcorn in a large bag.  

Spray the popcorn with a small amount of oil spray, sprinkle with and nutritional yeast and salt, and toss.







SWEET AND SOUR SAUCE

SWEET AND SOUR SAUCE

Preparation time: 10 minutes
Yield: 1cup

1-cup pineapple juice
¼-cup ketchup
1-tablespoon arrowroot powder
1-tablespoon soy sauce
2-tablespoons vinegar
1/2-cup of water

In a pot, over medium heat, whisk all ingredients together until thickened.

Preparation time: 20 minutes
Yield: 4 servings

1 to 3-tablespoons oil
1 medium onion
1 green pepper
½ cup pineapple chunks
½ carrot sliced on the diagonal
1 tomato cut in chunks
2-cups chicken flavored wheat-meat 
1-cup sweet and sour sauce




In a large skillet, heat oil over medium high heat.  Stir-fry the onion, pepper, and carrot until slightly softened.  Add the wheat meat, pineapple, tomato, and sauce.  

Serve with brown rice. 




RICE BALLS

RICE BALLS


Serve as croquettes with golden gravy and noodles or with rice.  They can be munched on during the day for a snack.

Oil a baking sheet or use a or silicon pad
Preheat oven to 350 degrees 
Preparation time: 20 minutes
Yield: 24 balls

1/4-cup celery, minced
1/4-cup carrot, grated
1/4-cup peanut butter 
4-cups rice, cooked
1/4-teaspoon salt
1-teaspoon basil 
2-tablespoons ground flaxseed
1-container (12.3 ounces) silken tofu

optional: 3/4-cup onion, minced

Combine all ingredients by kneading with your hands.  

Form into tablespoon size balls and place on an oiled baking sheet or silicon pad.  


Bake at 350 degrees for 40 minutes or until golden.
