GINGER COOKIES
Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 2-dozen cookies
1/2-cup maple syrup
1/4-cup molasses
1/2-cup coconut oil
2 1/2-cups whole-wheat pastry flour
1-teaspoon baking soda
1/2-teaspoon salt
optional: 1-teaspoon cinnamon, 1-teaspoon allspice
In a standing mixing bowl, mix together the maple syrup,
molasses and ginger.
In another bowl, whisk together the flour, baking soda, and
salt.
Add the dry to the wet and mix until uniform.
Pat the dough into a large rectangle 1-inch thick and wrap
in plastic wrap. Refrigerate for 30
minutes.
Roll out to ¼-inch thick between two pieces of parchment
paper. Cut into desired shapes with
cookie cutters. Gather dough scraps into a ball and roll out the scraps and repeat.
Bake on parchment lined baking sheets at 350 degrees for 11
minutes or until lightly golden.
