GINGER COOKIES




GINGER COOKIES

Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 2-dozen cookies

1/2-cup maple syrup
1/4-cup molasses
1/2-cup coconut oil
2 1/2-cups whole-wheat pastry flour
1-teaspoon baking soda
1/2-teaspoon salt

optional: 1-teaspoon cinnamon, 1-teaspoon allspice

In a standing mixing bowl, mix together the maple syrup, molasses and ginger. 

In another bowl, whisk together the flour, baking soda, and salt.

Add the dry to the wet and mix until uniform.   

Pat the dough into a large rectangle 1-inch thick and wrap in plastic wrap.  Refrigerate for 30 minutes. 

Roll out to ¼-inch thick between two pieces of parchment paper.  Cut into desired shapes with cookie cutters. Gather dough scraps into a ball and roll out the scraps and repeat. 

Bake on parchment lined baking sheets at 350 degrees for 11 minutes or until lightly golden.




EGGLESS NOG

EGGLESS NOG


Preparation time: 5 minutes
Yield: 8 servings

1-quart (4-cups) vanilla soy, rice, or cashew milk
1 container (12.3 ounces) silken tofu
½-cup maple syrup
½-teaspooon cinnamon
½-teaspooon nutmeg
½-teaspooon cardamom
½-teaspooon allspice
½-teaspooon turmeric

Blenderize all ingredients until smooth. 







FROZEN EGGLESS NOG

Eggnog is usually thought of as a winter holiday drink, but frozen Eggnog is refreshing on a hot summer day. 

½ recipe of the EGGLESS NOG
ice cubes

Add ice cubes while the blender is on until you have a frozen nog. 



BROCCOLI RICE

BROCCOLI RICE


Preparation time:  15 minutes

Yield:  6 servings

1-teaspoon oil
1-cup chopped onion
2-cups chopped broccoli
1 clove of garlic minced
3-cups of cooked rice
salt and pepper to taste
water as needed

Optional:  salt and sesame condiment

In a large skillet, heat the oil, saute onions, garlic, and broccoli until soft.  If sticking, add small amounts of water and stir. 


Add cooked rice and more water if necessary until heated then serve.   

SESAME CONDIMENT

SESAME CONDIMENT


Preparation time: 5 minutes
Yield: 24 servings


¼-cup sesame seeds
1/8-teaspoon sea salt

In a skillet, toast the sesame seeds until golden.  In a coffee grinder, Grind the seeds and salt in a coffee grinder.

Sprinkle over hot organic cooked brown rice and serve with a salad for a great simple meal.

GREEN PEAS WITH ONIONS

GREEN PEAS WITH ONIONS

Preparation time:  10 minutes
Yield:  4 servings

1/2 bag of frozen peas
1/2 cup chopped onions
1-tablespoon water
salt and pepper to taste

Place frozen peas, onions, and water in a microwave safe dish. 

Zap on high for 5 minutes.  Stir and zap for 3 minutes.  Repeat until onions               and peas are soft. 


Add salt and pepper to taste.
