DATE WALNUT BREAD
Oil a bread pan
Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 16 slices
1/2-cup smashed banana or smashed sweet potato
2/3-cup water
1/3-cup flaxseed, ground
1/4-cup coconut oil
¾ cup agave nectar
2-cups whole-wheat flour
1½-teaspoons baking powder
½-teaspoon baking soda
½-teaspoon salt
1-cup dates
1-cup walnuts
In the standing mixing bowl mix together the smashed banana
or sweet potato, water, flaxseed, oil, and agave.
In another bowl whisk together the flour, baking powder,
baking soda, and salt in a mixing bowl.
Add the dry to the wet.
Mix just enough until uniform.
Fold in the dates and walnuts.
Pour batter into an oiled bread pan.
Bake at 350 degrees for 35 minutes or until a toothpick
inserted into the center comes out clean.
