BOTANA BEANS AND CHIPS


Preheat oven to 425 degrees
Preparation time: 15 minutes
Yield: 12 servings


1 bag baked organic corn tortilla chips 
3-cups refried pinto beans
1 green pepper, sliced
1 red onion, sliced
2 tomatoes, sliced
1-pound vegan cheese
1 avocado, sliced

optional: olives sliced

 Assemble in layers.  On the bottom of a large ovenproof platter spread half the corn chips.  Spread half of the beans on top.  Sprinkle with half of the cheese and then repeat the layers. 

Add the veggies except for the avocado.  Bake at 425 degrees on a top rack of the oven until the cheese melts. 

Add avocado and serve with salsa.

TOOTHPICK TRICK


Make sure your cupcake or cake is done to perfection by using an old trick.  Stick a toothpick into your cupcake.  If it comes out clean, it's done.  If raw batter clings to the pick, bake longer.  For cakes, test the center and edges with the toothpick trick.

MONKEY CUPCAKES


MONKEY CUPCAKES


Oil a muffin pan and gem pan
Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 12 cup cakes and 12 gems

1-cup nut, rice, soy milk
1/3-cup ground flaxseed
1 cup blenderized ripe banana
1-teaspoon vanilla
½-cup agave nectar
3-ripe bananas, mashed
2-cups whole-wheat flour
1-cup vegan chocolate chips
½-cup pecans

In a standing mixing bowl, mix together the milk, flaxseed, applesauce, vanilla, agave, and bananas. 

In another bowl, whisk together the flour, and chocolate chips. 

Add the dry to the wet.  Mix until uniform. 

Fill muffin cups 2/3 full with the batter.  Mix in the pecans by hand to keep the pieces large.
 

Bake at 350 degrees for 25 minutes, or until a toothpick inserted in the center comes out clean. 





BLUEBERRY OAT WAFFLES


BLUEBERRY OAT WAFFLES


Preparation time: 20 minutes
Yield: 5 waffles (1 cup of batter)

3-cups oats
2-cups water
½-salt
1-teaspoon vanilla
2-tablespoons maple syrup
1-pint blueberries
spray oil

Blend all ingredients except blueberries. 

Pre-heat the waffle maker. 
Spray waffle maker with oil. 
Place 1-cup batter on the sprayed waffle maker and add blueberries. 
Remove when waffle maker signals the waffle is finished. 
Spray and repeat.
 Place finished waffles in 170-degree oven on an uncovered plate to keep them warm if you wish to serve them at one time. 

Time and Money Saving Tip:  Refrigerate or freeze leftover waffles.  When you want a waffle, pop in the toaster and serve.
