BOTANA BEANS AND CHIPS
Preheat oven to 425 degrees
Preparation time: 15 minutes
Yield: 12 servings
1 bag baked organic corn tortilla chips
3-cups refried pinto beans
1 green pepper, sliced
1 red onion, sliced
2 tomatoes, sliced
1-pound vegan cheese
1 avocado, sliced
optional: olives sliced
Assemble in
layers. On the bottom of a large
ovenproof platter spread half the corn chips.
Spread half of the beans on top.
Sprinkle with half of the cheese and then repeat the layers.
Add the veggies except for the avocado. Bake at 425 degrees on a top rack of the oven
until the cheese melts.
Add avocado and serve with salsa.
