GARBANZO DIP


GARBANZO DIP


Served with cut veggies and THREE SEED CRACKERS.

Preparation time: 3 minutes
Yield: individual servings


1-can (15 ounces) garbanzo beans or 2 cups cooked beans
½-cup tahini
2-tablespoons lemon juice
1-tablespoon olive oil
1 clove garlic
½-teaspoon salt
paprika

optional: add fresh chopped red pepper, use roasted garlic for a milder garlic taste
Blenderize all ingredients together except paprika.  Place in a bowl, drizzle with olive oil, sprinkle with paprika and serve with cut veggies, crackers, or pita.

THREE SEED CRACKERS


THREE SEED CRACKERS
 
Cracker can be cut in shapes or broken after baking.
Preparation time: 20 minutes
Yield:  4-dozen small cracker squares

2-cups whole Oatmeal
11/2-cups whole-wheat flour
1/2-cup pumpkin seeds
1.2-cup sunflower seeds
1/4-cup sesame seeds
1/2-cup coconut oil
1-cup water

In a mixing bowl combine the oatmeal, flour, and seeds.

Heat the coconut oil in the microwave for 30 seconds if it's not liquid.  Add the wet to the dry. 

Roll out the dough between two pieces of parchment paper to 1/4-inch thin. 

Cut into any size rounds, squares, and rectangles, cut out shapes, or roll into a flat sheet to broken after baking.  

Place the parchment paper with the crackers on a sheet pan and bake at 325 degrees for 45 minuets. 

Refrigerate or freeze extras.  

TOFU SANDWICH



TOFU SANDWICH
Open face Tofu Sandwich


Preparation time: 5 minutes
Yield: 4 servings

8 slices whole-wheat bread
8 Tofu steaks
4-tablespoons mayonnaise
4 Romaine lettuce leaves

Spread mayonnaise on both insides of the bread.  Assemble sandwiches with lettuce and tofu steak.  The tofu steaks can be hot or room temperature. 

TOFU STEAKS


TOFU STEAKS



Preparation time: 10 minutes
Yield: 4 servings

1 container firm tofu
1-tablespoon olive oil
1/4-cup soy sauce
1/4-cup water

Heat oil in skillet. 

Slice tofu in half width wise.  Cut each half into four pieces, and you end up with 8 manageable pieces that fit into a skillet. 
 Brown tofu on each side.

Mix soy sauce in water, and drizzle over each tofu slice.

Once liquid is absorbed, remove from heat. 

Serve with brown rice or use in a salad or sandwich.
