PIZZA BLANKS


PIZZA BLANKS

Preheat oven to 350 degrees
Preparation time: 30 minutes
Yield: 12

2-cups warm water
1-tablespoon agave nectar
2-teaspoons yeast
4 to 5-cups whole-wheat flour
1-teaspoon salt

Zap water in a cup for 30 seconds.  In the standing mixer bowl whisk together the water agave.  If comfortably warm to the touch, whisk in the yeast. 

Place the yeast mixture in a turned off microwave oven for 10 minutes, or place in the oven if you have a Bread Proof setting.

Add the flour, salt, and knead with the dough hook for 10 minutes. 

Place the ball of dough in an oiled bowl, cover with a wet cloth, and place in a turned off microwave oven for 30 minutes until double in size.    

Punch down the dough and divide into 12 equal parts.  On a floured surface, shape into balls, then roll or pat into a circle about 6 inches in diameter. 

Place the dough on parchment paper on a baking sheet.  Bake the pizza blanks at 350 degrees for 4 to 5 minutes or until lightly browned. 

Use with your favorite pizza topping and freeze extra blanks.  They can be pulled from the freezer, topped, and baked for 5minutes or until the cheese melts. 

If you have pizza blanks in the freezer, you can put together pizza and a salad in 5 minutes.  It's a real treat after a busy day.
