AVOCADO SALAD DRESSING


Avocado Salad Dressing


Preparation time: 5 minutes
Yield:  2 servings

1 ripe avocado
1/2-cup white vinegar
salt and pepper to taste.

This is a fresh dressing to be used on a 4-cup salad. 

Scoop the ripe avocado out of the skin and smash with a fork.  Slowly mix in the vinegar until you have a creamy mixture.  It shouldn't be smooth.  Add salt and pepper to taste. 

CHIK CUTIE BEET SALAD


CHIK CUTIE BEET SALAD


Preparation time: 10 minutes
Yield:  2 servings

4-cups mixed lettuce
4 green onions, sliced
1 grated carrot
1 stalk of celery, sliced
1/4-cup sliced almonds
1/2-cup frozen peas
2 Cuties (Clementine or Mandarin oranges)
1/2-cup grated beet
vinegar and olive oil to taste
salt and pepper
2 chik filets

In a large bowl, mix together all the ingredients except for the Cuties and grated beets. 

Toss with the dressing and season with salt and pepper to taste. 

Place the salad on two large dinner plates.  Garnish with the grated beet and Cuties. 

Heat the Chik like filets in the microwave, slice, and place on top of the salad.  

CHIK COOL HOT SALAD


CHIK COOL HOT SALAD


Preparation time: 10 minutes
Yield:  2 servings

4-cups mixed lettuce
1 cucumber, peeled, seeded, and sliced
2 stalk of celery, sliced
salt and pepper
cayenne pepper to taste
2 chik filets

Cool type dressing like Ranch, Mayo, or Avocado.



In a large bowl, mix together all the ingredients except for the chik filets

Toss with the dressing and season with salt and pepper to taste. 

Place the salad on two large dinner plates. 

Rub in the cayenne pepper on each side of the chik filet.  Heat the chik filets in the microwave, slice, and place on top of the salad.

ROASTED SLIGHTLY SALTED PEANUTS


I grew peanuts in the garden.  I like them in the shell with a little salt.  The store bought peanuts in the shell are too salty for me.  I experimented and came up with a roasted slightly salty peanut. 

Preparation time: 10 minutes
Yield:  16 cups

16 cups of peanuts in the shell
1-cup salt. 


After peanuts are washed free place them in a large plastic dishpan. 

Add water to cover, salt, and let the peanuts soak overnight. 

Drain water from peanuts and place them on two cookie sheets. 

Roast, stirring occasionally for 1 1/2-hours at 300 degrees.
