BEET SOUP
Preparation time: 15 minutes
Yield: 12 servings
1 to 3-tablespoons olive oil
1-pound beets, grated
1-cup onion, chopped
1-cup celery, chopped
2 carrots, grated
¼ head of cabbage, chopped
8-cups water
2 veggie bouillon cubes or
2-teaspoons of bouillon powder
1-tablespoon maple syrup
1-tablespoon lemon juice
salt and pepper to taste
Optional: serve a dollop of vegan yogurt or sour cream in the center of the soup
In a pressure cooker, heat oil over medium heat.
Sauté the onions, celery, carrots, cabbage, and beets until soft.
Add water and the bullion.
Cover, bring up to pressure, and turn off heat.
Let it set for ½-hour.
Remove cover.
Add the maple syrup, lemon juice, salt and pepper to taste, and then serve.

Artifact occupies a ground floor space with a direct exposure to a busy pedestrian traffic and a maximum capacity for proper presentation, marketing and sales.
During our 25-year experience we have developed social and business contacts with some of the world's most influential art collectors and professionals.
They include Agnes Gund (President Emerita of MoMA), Mace Neufeld (Hollywood producer, collector), Peter Marino (architect, collector), Clarence Avant
(president of Motown Records, collector) and many others. We have collaborated with global corporations, such as Microsoft, American Express, PBS and NASA
on art related projects.
Usually, we hold several simultaneous solo shows and cover essential expenses related to our space and infrastructure. To further promote exhibitions, artists engage
additional marketing tools, such as catalogs or advertisement, and cover shipping expenses. Our exhibitions may feature physical installations or digital presentations of artwork
when artists prefer not to ship their original work to New York. Additional projects include global art fairs in New York, Los Angeles, Miami and Monte Carlo where we have been
the only art gallery invited to the exclusive Monaco Yacht Show https://www.monacoyachtshow.com.
