PINEAPPLE UPSIDE-DOWN CAKE

PINEAPPLE UPSIDE-DOWN CAKE


Oil a 9-inch square-baking pan or cake pan
Preheat oven to 350 degrees
Preparation time: 10 minutes
Yield: 12 servings

1/3-cup maple syrup
2-tablespoons coconut oil
1-15-ounce-can pineapple


2/3-cup maple syrup
1/2-cup nut, rice, or soy milk or pineapple juice from can
1/3-cup coconut oil
2-teaspoons vanilla
1-tablespoon white vinegar
2-cups whole-wheat flour
1-teaspoon baking powder
1-teaspoon baking soda
1/8-teaspoon salt



Zap the 1/3-cup maple syrup and the 2-tablespoons oil for 1 minute.  Pour the maple syrup and oil mixture into a sprayed 9-inch square-baking dish or cake pan.  Arrange the slices on the bottom. 

In a standing mixing bowl, mix together the maple syrup, milk, oil, vanilla, and vinegar. 

In another bowl, whisk together the flour, baking powder, baking soda, and salt. 

Add the dry to the wet and mix until uniform. 

Pour the batter over the apple slices. 

Bake at 350 degrees for 35 minutes or until a toothpick inserted into the center comes out clean. 

Cool for 10 minutes.  Invert onto a serving plate.
