BAKED CORN CHIPS


BAKED CORN CHIPS


Oil a baking sheet
Preheat oven to 400 degrees
Preparation time: 20 minutes
Yield: 48 large chips or 96 small


pack of corn tortillas
spray oil
salt

Spray each side of the tortilla or brush with oil.  Cut each tortilla in half, and in half again.  Keep cutting in half if you want smaller chips. 

Place chips on a sprayed or oiled baking sheet.  Bake at 400 degrees until crisp and golden for about 10 minutes. 

Sprinkle lightly with salt while still hot.

ORGANIC FRUIT MONEY SAVING TIP

During the season look for sales of organic frozen fruit.  Have bags of frozen fruit to whip into smoothies.  The in season frozen fruit is less expensive than the fresh fruit.

Freeze surplus fruit from your garden.   

VANILLA SMOOTHIES



VANILLA OR VANILLA FRUIT BREAKFAST SMOOTHIES

 
Strawberry Vanilla Smoothie
The frozen fruit thickens the smoothie.  If it's not thick enough, add ice cubes.  If too thick add more almond milk.

Preparation time: 3 minutes
Yield: 2

1 scoop vanilla vegan protein powder
1-cup of any of the following fruit: frozen banana, orange, strawberry, cherry, plum, blueberry, mango, papaya, peach, or any fruit you like
2-cups almond milk, original flavor
stevia if needed
ice cubes if needed

optional:  1/2-1-cup frozen greens (Madeira vine, spinach, Malabar spinach, New Zealand spinach, collard greens, kale, or Swiss chard).  This is optional if you dislike a green or brownish colored drink.

Throw all ingredients in the blender and blenderize (blend all the ingredients in the blender).


CHOCOLATE SMOOTHIES



CHOCOLATE SNEAKY GREENS BREAKFAST SMOOTHIES

Frozen Collard Greens, Chocolate Vegan Protein Powder, and Frozen Banana.  

This is my go to breakfast in hot weather.  I don't like to eat breakfast, but I know it's important to eat within a half hour after waking.  I can't eat that early, but I can sip a smoothie and get down about 160 calories to start my day. 

I have frozen fruit and frozen greens in my freezer at all times.  Frozen bananas are cut in half so they break down faster in the blender.  Greens frozen can be reduced to green confetti to throw in the blender.  The chocolate protein powder covers the greens taste and color best.  Berries can be thrown in without changing the chocolate flavor.  The frozen greens and fruit thicken the smoothie.  If it's not thick enough, add ice cubes.  If too thick add more almond milk
