WHEAT MEAT with MUSHROOM GRAVY


1 recipe of WHEAT MEAT STEAKS
1 recipe of GOLDEN GRAVY
1-tablespoon oil
1 chopped onion
1-pound of sliced button mushrooms

In a large heated skillet, add the oil then mushrooms. 

Sauté until slightly browned.

Add the gravy to the mushrooms and onions and heat until a boil. 

Lower heat to a simmer and add the wheat meat steaks. 

After the steaks are hot, serve with mashed potatoes, vegetable, and salad. 






LENTIL SOUP

LENTIL SOUP

Preparation time: 15 minutes

Yield: 16 servings

1 to 3-tablespoons olive oil
1-cup onion, chopped
1-cup grated carrot
1-cup celery stalks, and leave, chopped
3-bay leaves
5-cups lentils
1 vegan bullion cube
8-cups water
salt and pepper to taste

optional: lemon juice or balsamic vinegar

In a pressure cooker, heat oil over medium heat, and sauté onion, carrot, and celery until soft. 
Add the bay leaves.

Add the remaining ingredients and bring up to pressure. 

Lower heat and cook for another 3 minutes.  Remove from heat and let it sit for ½-hour.  Add salt and pepper to taste. 

Stir and serve with a splash of lemon juice or balsamic vinegar if you desire.




PEANUT BUTTER CHOCOLATE CHIP COOKIES

PEANUT BUTTER CHOCOLATE CHIP COOKIES

Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 3-dozen cookies

1-cup maple syrup
¼-cup ground flaxseed
1/2-cup peanut butter
3-cups oatmeal
1-teaspoon baking soda
3/4-cup chocolate chips



In a standing mixing bowl, mix together the maple syrup, flaxseed, and peanut butter.

Blenderize oats and baking soda. 

Add the dry to wet and mix until uniform.  

Mix in the chocolate chips.

Use a small ice cream scoop to drop cookies on silicone pads or parchment covered baking sheets.  Press the bottom of a glass on each cookie to flatten.  Use plastic film to prevent the glass bottom sticking to the dough.


Bake cookies at 350 degrees for 12 minutes or until lightly golden.  




LEMON COOKIES

Preheat oven to 350 degrees
Preparation time: 15 minutes
Yield: 2-dozen cookies

3/4-cup maple syrup
1/2-cup coconut oil
1 lemon, juice and zest
2 1/2-cups whole-wheat pastry flour
1-teaspoon baking soda
1/2-teaspoon salt


In a standing mixing bowl, mix together the maple syrup, oil, lemon juice, and zest.

In another bowl, whisk together the flour, baking soda, and salt.

Add the dry to the wet and mix until uniform.   

Pat the dough into a roll and wrap in plastic wrap.  Refrigerate for 30 minutes. 

Slice roll into cookies 1/4-inch thick.

Bake on parchment lined baking sheets at 350 degrees for 11 minutes or until lightly golden.
